Ingredients
1 Slice of Del Mineral® Onion
2 Del Mineral® Tomatoes
5 Del Mineral®l Guajillo Chilis
3 Tbsp. of oil
1 Cup of water
12 Corn tortillas, passed through oil
1/2 Shredded chicken breast
1/2 Cup of cream, to accompany
200 grs Cotija Cheese
White onion to taste for decoration Del Mineral®
Instructions
Remove the seeds from the chilies and soak them in hot water.
Sauté the onion, add the tomatoes cut into pieces and the chilies without letting them toast. Peel the tomatoes and blend the ingredients with water. Cook the sauce for 10 minutes or until it thickens slightly.
Pass the tortillas through a little oil for a minute, remove them and put them on a plate, fill them with chicken. Arrange three on each plate. Drench them well with the sauce, add cream and cheese.
Cut very thin slices of white and red onion into small squares to serve.
