8 Eggs
1 Tablespoon of oil
1/2 Cup of julienned red onion
1 Cup of crumbled Cotija cheese
1/2 Cup of parsley leaves
1 Del Mineral® Ancho Chili
1 Cup of Del Mineral® cooked beans
1 Cup of chicken broth
Instructions
- Remove the seeds from the chili. Boil it for a few minutes in the chicken broth.
- Add half of the beans and blend the mixture. Return them to the pot with the whole beans and season. Beat the eggs. In a large pan, cook them to make scrambled eggs.
- Distribute the eggs on the plates, bathe them with the bean sauce, and finish with a little cheese, purple onion, and parsley.
