Ingredients

8 Eggs

1 Tablespoon of oil

1/2 Cup of julienned red onion

1 Cup of crumbled Cotija cheese

1/2 Cup of parsley leaves

1 Del Mineral® Ancho Chili

1 Cup of Del Mineral® cooked beans

1 Cup of chicken broth

Instructions

  1. Remove the seeds from the chili. Boil it for a few minutes in the chicken broth.
  2. Add half of the beans and blend the mixture. Return them to the pot with the whole beans and season. Beat the eggs. In a large pan, cook them to make scrambled eggs.
  3. Distribute the eggs on the plates, bathe them with the bean sauce, and finish with a little cheese, purple onion, and parsley.
