Ingredients

  • 4 Cups of totopos (tortilla chips)
  • 1 Clove of garlic
  • 5 Tomatoes (Del Mineral®)
  • 1 Small piece of onion (Del Mineral® )
  • 1 Guajillo chili (Del Mineral®)
  • 1 Cup of double cream cheese (queso doble crema)
  • 4 Eggs
  • 1 Serrano chili, sliced
  • 1 Cup of cooked bayo beans (Del Mineral®)

Instructions

  1. Remove the seeds from the chili. Boil it for a few minutes in chicken broth.

  2. Add half of the beans and blend the mixture. Return it to the pot with the whole beans and season.

  3. Beat the eggs. In a large frying pan, cook them to make scrambled eggs.

  4. Distribute the scrambled eggs onto the plates, pour the bean sauce over them, and finish with a sprinkle of cheese, red onion, and parsley.
