Ingredients
- 4 Cups of totopos (tortilla chips)
- 1 Clove of garlic
- 5 Tomatoes (Del Mineral®)
- 1 Small piece of onion (Del Mineral® )
- 1 Guajillo chili (Del Mineral®)
- 1 Cup of double cream cheese (queso doble crema)
- 4 Eggs
- 1 Serrano chili, sliced
- 1 Cup of cooked bayo beans (Del Mineral®)
Instructions
Remove the seeds from the chili. Boil it for a few minutes in chicken broth.
Add half of the beans and blend the mixture. Return it to the pot with the whole beans and season.
Beat the eggs. In a large frying pan, cook them to make scrambled eggs.
- Distribute the scrambled eggs onto the plates, pour the bean sauce over them, and finish with a sprinkle of cheese, red onion, and parsley.
